LSUWen -- Agave nectar has become increasingly popular and more readily available. Look for it in your local market near the honey. If you want to order it online, here is a link to a good brand that I use. If you can't find agave nectar, you can certainly substitute with a light flavored honey.

[...] Summer Chicken Salad with Green Apple Vinaigrette The last thing people want to do during the summer is be indoors. This chicken salad is easy to make and you can even do it outside while enjoying the hot sun. Made with crisp green apples, chicken and a bed of leafy lettuce, this salad screams summer time!
Kelsey - If you note the directions, 2 teaspoons of the salt is put in the water to poach the chicken and the remaining 1/2 is used in the dressing. Don't worry, I've definitely done the exact same thing before! I can't tell you how many times I've skipped over one element of an instruction and ended up with a totally wrong result.

Hey, I tried making your recipe with my best friend. I have to say-- delicious! The one thing was, the dressing was way too salty! Maybe you meant only 1/2 tsp salt?

This is like a lighter variation on a Waldorf Salad! There's something about chicken salad that just screams "Summer Luncheon" (not lunch, luncheon) doesn't it?
