In growing the mold that gives blue cheese it's distinctive name and flavor, they grow the mold on bread or flour. There are some processors that don't do this, but some that do. I learned that the hard way a few weeks ago with some delicious Gorgonzola! However, I would love to make these, subbing swiss or a nice white cheddar! My husband would love them. Yum!
